Do You Meal Prep or Do You Just Wing It?
Yes, you can have chicken nuggets and still achieve your goals!
This recipe is sure to satisfy a craving for crispy, breaded chicken nuggets.
A large batch of these is perfect for weekly meal prep, as they can be served with baked sweet potatoes and veggies, but also added on top of salads or to rice bowls.
When eating clean, the lack of variety can get boring.
This can cause you to fall off the wagon. I think that craving junk food isn’t always about the calories. It can be about seeing something different on your plate, having some crunch, texture, or unique detail that may be lacking.
By using foods that you’re probably already eating, but preparing them differently, you’ll have the same macros with a totally new dish.
These chicken nuggets can be stored in the fridge for up to 5 days and frozen for up to 6 months, which means you can double or triple the recipe to have plenty for later!

In about 30 minutes you can have these crispy tenders that pair well with potatoes, sweet potatoes, veggies, or even in a wrap.
Toss them in a tupperware and have as a snack with some Greek yogurt and hot sauce dipping sauce.
By portioning out the chicken, you know what a serving size is and can easily track your intake.
Meal Prep Recipe:
BAKED CHICKEN NUGGETS
YIELD 4 servings
SERVING SIZE 5 chicken nuggets
PREP TIME 15 minutes
COOK TIME 20 minutes
INGREDIENTS
1½ cups almond flour
1lb (454g) ground chicken breast
1 large egg, beaten
2 tsp Italian seasoning
1 tsp garlic powder
½ tsp smoked paprika
1 tsp kosher salt
1/2 tsp black pepper
DIRECTIONS
Preheat the oven to 375°F (190°C).
Place the almond flour in a large shallow dish.
In a large bowl, combine the ground chicken, egg, Italian seasoning, garlic powder, smoked paprika, salt, and black pepper.
Mix well to combine.
Shape the mixture into 20 nuggets and then coat on all sides with the almond flour.
Transfer the nuggets to a sheet pan and spray with a light coating of cooking spray.
Bake for 15 to 20 minutes or until the chicken reaches an internal temperature of 165°F (75°C)
